Can u password protect certain apps like evernote?

You can't from the stock system other than the pattern, PIN or Password locks but if you search Google Play there are apps that can do this like Smart App Protector Free (https://play.google.com/store/apps/details?id=com.sp.protector.free).

ok because I would like to store a few documents on dropbox that would be sensitive in nature. Also I would want to be able to password protect Google Drive so no one can get to my documents.

Dropbox has a PIN number feature built into the application so check under settings in Dropbox, unfortunately Google Drives doesn't so you'd need to use one of the apps mentioned above.
