I wanted to test how the encryption worked, and I was happy with it. How do you remove this feature, when I go to security it just states encryption is on, how so you unencrypt/decrypt this device then?

According to the Nexus 7 Guidebook on GP (page 153), encryption is irreversible.
The only way to undo it, is to do a factory reset.

I played with encryption on another device. I was able to remove it, but I don't remember if it required a factory reset or a reboot. I thought it was just a reboot. Maybe this device is different.

I wouldn't have thought there'd be any point in encryption if a simple reboot would unencrypt it??

I just read you have to do a full reset and wipe all your data.
