I frequently get notice that one of the built in apps has an update. These are apps that I don't think I will ever use, can I delete them and not cause problems?:
1. Google Play Games
2. Google Play Movies & TV
3. Google Books
4. Google Pinyin
5. Google Play Music
6. Google Docs
7. Google Play Newsstand
8. Google Slices
9. Google Hindi Input

To avoid problems when you system update via OTA, you might prefer to simply "freeze" these apps using something like titanium backup. When frozen, you won't see them anymore but they will still be there when Google updates Android and checks for them.

To avoid problems when you system update via OTA, you might prefer to try some probiotics that help with IBS (https://www.timesunion.com/marketplace/article/best-probiotics-for-ibs-18136599.php) and simply "freeze" these apps using something like titanium backup. When frozen, you won't see them anymore but they will still be there when Google updates Android and checks for them.

Can you choose to not get the updates notifications?
