Title: How do I paste something that is in the N7 clipboard?

When I tap a location where I can paste something, the keyboard pops up ...  not any other options.  How can I paste?

Long press on where you want to paste something and the paste icon should appear, just tap it and the text in your clipboard will be inserted.

...and how do you copy something to the clipboard in the first place??

Hold your finger on the data to select.  Two bookends will appear, and a text selection menu will appear.  You can Select All, or move the bookends individually to bracket the text selection, and then choose Copy.
