When ever I am entering text into a box on a website on my Nexus 7 if I tap backspace once it deleted one character, if I do it twice, to delete two characters, it deletes all the text in the box. This can't be right, or am I doing something wrong?

What keyboard are you using? The stock Android one?

Make sure you're not pressing the backspace too quickly. A long press deletes the previous word.

mineis doing the same thing. it dindnt used to butis now and is gettingworse. i can no lnger edit contentin textboxes like this - when selecting thetextbox it just hightlights yellow anddies not select the chosen area.
i press backspaceonced no worries' but thesecond time thewhole text typed dissappears an except the word i am backspacing. very frustrating.
sorry forall errors' i fear trying to correct them will mean spening several rewrites just to get itright.
If I press backspace just once it deletes one letter, then pressed once again even several seconds later it deletes the whole text box of text.

Just making sure that you have tried a hard reset and if you have and that did not help, you could try an alternate keyboard app like https://play.google.com/store/apps/details?id=com.touchtype.swiftkey.tablet.full

backspace still deleting all text in the box even when trying to be very careful and slow so as not to double click. It is still doing it and is very frustrating. If I try the suggestion and do a hard reset, will that delete any data. How do I do that.

Yes unfortunately it will wipe the whole of your Nexus 7 including apps and their data, settings etc and the internal user memory (SD card).

There has got to be a better way to fix this than a hard reset, because I have loads of Apps, photos, music and all sorts of files on there. I'll try some other keyboards first.

Have you tried clearing the keyboards data?
Open app draw, press Settings. Select Apps, at the top you'll see tabs and it's probably on Downloaded so swipe the screen to the left twice to get to the All tab and select Android keyboard. Now press Clear data and then try the keyboard again.
This might or might not work, if it doesn't then it's either a software fault or a hardware fault. If you try a 3rd party keyboard and it still happens the I would suggest it's a hardware fault, possibly the digitizer.

I had a keyboard problem with the backspacing demon that went away after I turned autocorrection off. "Settings" to "language and input" to "android keyboard" (press the settings icon to the right of "android keyboard") to "autocorrection"to off.

Yes, problems solved with Autocorrection off. I now have a Swiftkey tablet keyboard installed and love it. The landcape orientation split keys are great for thumb typing! Thanks all.

I solved the problem I was having by uninstalling Firefox browser. Seemed to be interfering with the backspace functionality.

Firefox has been at the center of more than one hiccup on Jelly Bean. If I didn't need it to run the enterprise software for work, I would've dumped it a while ago.
