I had this happen on my GF's S3 Galaxy and using Gmail. Powering down the device and restarting it allowed it to accept the new password. Keep us posted.

The response I get is "Couldn't open connection to server".  I am able to access my email with no problem from my other computers using the new password.  BTW it is a Charter email account if that makes any difference.

I was going to ask you if you tried another device. Scratch that. Deleted and rebooted as well. What app are you using to access? Have you tried signing in using a browser on the Nexus? Is Charter an internet service ? If so you might want to check out their support page for ideas.

"Couldn't open connection to server" is usually the message when you have a poor or non existing data connection...

First off Charter is an ISP, so you would be using a POP email account. So make sure you are using the email app (White envelope with gold flap with white e) and if does not auto detect your email setting or the auto detected settings do not work check the name of the incoming email server (something like mail.charter.net) and for the outgoing mail server on one of your computers that is working and set them the same on your Nexus 7 by selecting manual setup or either modifying the current ones if you have the account setup already. Couldn't open connection to server can be the server address for the incoming server, user name, or password. Also some ISP require the full email address for the user name for example bob@charter.net instead of just bob.

Are you using the gold envelope app?
