What does it mean to "root your N7"?
Why would I want to do this?
Any downside to this?

You should do a search on this forum, you'll find lots of info abut this, including a step-by-step guide on rooting your N7.

I understand the whole warranty thing, but does a rooted N7 affect future Android OS updates?

Rooting will not generally affect your ability to run updates, but updates may remove root from your device, so I always install RootKeeper. One caution though, if you choose to remove pre-installed apps, the update may look for one those apps and the update fail if it cannot find that app.

Don't worry radio, it's easy enough to flash a stock image with WugFresh's Root Toolkit.

True enough JayJ.

Now, for those who are not an advanced user like JayJ, "Flashing a stock image" is basically connecting your tablet to a computer, taking an external image and restoring your tablet to factory state and to quote JayJ, "It's easy enough."
