Whatever you want ;)

I'll recommend the following, which I use daily or almost daily:

ES File Manager
AVG Antivirus
Angry Birds
Wi-Fi File Transfer
SD Card Storage Optimizer
Bird has seen >650 North American bird species
Rooted Nexus 7
49.5 mpg avg for 53k miles in non-hybrid Scion xB
Retired 9 yrs, and loving it

Depends a lot on what you will be using your N7 for:
Watching videos:  MX Player
Reading books:  Cool Reader
Moving files around your network:  ES File Explorer
Reading pdf files:  ezPDF Reader
Listening to music, audio books, etc.:  Winamp
Reading magazines:  Zinio
Listening to the radio:  Tune In Radio

Oops.  I went over five apps.  You could get 50 responses and it is doubtful you would see the same list twice.  Instead, I suggest you search for the type of app you want to use, check the reviews hit the Play Store.  Most of the apps have a paid and free version.  Others have a free testing period.  You always can get a Play Store refund by uninstalling within 15 minutes.
I used to be crazy until I found out that insane pays more.

Where am I?  What am I doing in this handbasket?

BEST APPS??  I don't see that one in GP or Amazon, am I not searching correctly?  Where did you get 'Best Apps'?  Is that the whole name?
Tnx,

This is totally a question that depends on a lot of things. Are you going to root your device? If so that turns the worm.
Are you a media /play type or using it for word processing and more work oriented tasks?
I'm sure there are a couple golf apps that could go on your top five depending on your needs.  Titanium Pro, Root Explorer, Stick Mount, Voodoo OTA, Quick Boot, Power Amp, BSPLAYER. OFFICE SUITE PRO, Karaoke Player
I would say my needs are more up in the 15 range.

The apps I can't live without...

News readers - Pulse, Currents, Flipboard, Huffington Post (I'm a news addict).

Stumbleupon. I love this app.

Chess.com app. I'm a chess junkie.

White Noise - Helps me sleep.

Pocket

Kindle

That's about it.
