Where is the backup located?

Hi, I'm fairly new to my Nexus7 and love it. 
I have downloaded the Nexus7 Tool Kit v2.0.0
Unlocking and Rooting seems pretty much straight forward following the detailed instructions.  My question: If I backup all of my apps and data, where will they be located? If rooting the nexus erases all data, how can I restore all of my purchased apps and data? 
Can I backup everything? Will it be located on my Win7 PC?
This is probably beyond basic but I haven't been able to find a post that confirms exactly where the backup is located.

I'm not familiar with your tool kit, but the one I used & the one recommended by this website, allows you to save a backup copy on a desktop/laptop, cabled to your N7.  You then restore your data to the N7 from the backup.

The Root Toolkit in our Guide to Rooting will allow you to backup your Apps and data to your PC regardless of whether your Nexus 7 is rooted or not.

Thank you both for writing.  This is putting my mind at ease. BTW, I downloaded the Nexus7 Tool Kit. Inc. 1.55 KB.
