My guess is that Google Services is a blanket for a number of processes such as file transfers, data streaming, speaker output, etc.

I suggest the OP go to > settings. > apps.  Identify what's running, and force stop anything he's not actively using. I have had to do this a few times myself when Android has gone haywire.

I have done two factory resets since this thread started and I have had no improvements. The second time I installed only very essential apps.

Could this have anything to do with the fact that my nexus is rooted? The only thing I can think of now would be to unroot and relock my nexus and see f it changes anything.

The rooting process changes nothing that would cause this to happen.

Have you flashed a new ROM on your device.  Jay J is accurate, in that when you root, no change will occur to your battery usage, however, when you flash a new ROM, a new kernel gets flashed also, which does effect the battery.  During the root process, did you over clock the device, or mess around with the voltages at all?

I am on stock ROM and kernel. I have never done any over clocking or voltage stuff.

The problem is battery usage varies device to device and user to user so in all honesty comparing battery stat screens isn't really helping anybody, it can give an indication or sometimes help weed out a rogue application but because we all use our devices so differently and not only that we can use them differently ourselves each time we reach for them the battery stat screen isn't really going to shed much light on this issue.
It's a harsh thing to do but I would suggest backing up your devices internal memory and doing a factory data reset, then start installing a few important apps at a time and see how it goes. Time will tell...

EDIT- Just to add to the above and after reading your OP again, I use my N7 medium to heavily and I don't get 3 days out of it. Wi-Fi is nearly always turned on, I use MX Player to watch movies and play games like Horn and GTA3, post in here via Tapatalk but the usage my N7 varies hugely from day to day.
You mentioned you charge your N7 overnight, I do this with my phone and have no problems but I don't do this with my N7. Do you run the battery down before charging or do you charge it irrelevant of what charge it has remaining?

I usually wait until it gets below 30%. If it is above that it is enough to get me through a school day. On the weekend however I usually charge it for an hour or so in the morning regardless of the battery. Unless of course it is like 80% or above. Or if at the end of the day it is below 30% I will charge over night. I have done a factory reset 3 times now and only installed apps I really need for everyday use and it may have helped a small amount but it is not noticeable.

To add to JJ's explanation, to determine whether or not it is a rogue app, start you device in safe mode, then install the apps, one by one, and see if there is a marked change.  This will give you the ability to rule out troublesome apps.

What exactly does safe mode do? I will try that when I get home.

Safe mode on the phone is similar to that on a computer.  Basically, it opens an app free image of your device.  This gives you a free slate to add your apps, one by one, and find a troublesome app.  The cool thing is your not wiping your device, so when you get out of Safe Mode, your device is as you left it.
