I've uninstalled a pile of stock apps so its not really working for me.

Its not a good idea to uninstall applications on a Nexus device because of the way OTA updates work, checking that the system hasn't been compromised. The best thing is to Disable them from Apps in settings, this way the apps are still there and the update will take.

If you want to update, you'll either have to find copies of those apps and reinstall them or flash the factory image...

What apps have you uninstalled NordieBoy?

Not sure what apps, as they're not there anymore.
Gtalk, pinyin keyboard, currents, and other Google apps I never use.

After re-flashing with the stock 4.2.1 rom, the ota updater didn't show any update available but the download worked.

Have you tried rebooting? It's simple but often works like a charm...

Failing that, Settings> Apps> All> Google Play> Clear data and Force stop...

Open GP, agree to T&C's and try again.

I havebeen able to force the update using the Google framework trick. Keeps failing for me though.

hello to all.. this is my first post.. i am still on 4.2.1... i check for updates and it says "your system is up to date". i restarted my nexus 7 and still no update.. should i wait or do a factory reset... i know when i had my bionic, whenever there was an update i had to do a reset... thank you

I got the same problem
In addition, I got it restart to TWRP and install the downloaded firmware in zip but it still FAILED
I don't really to do a factory rest and start installing, registering everything

I would wait, in fact I did. Just got the update. No need to reset.
